Discovering Fugazza – Argentina's Unique Pizza

Fugazza, a staple of Argentine cuisine, is a delightful variation of pizza that reflects the country's rich Italian heritage. Unlike traditional pizzas, Fugazza boasts a focaccia-like base, topped generously with onions and sometimes adorned with cheese, making it a flavorful and aromatic treat. This pizza is particularly popular in Buenos Aires, where Italian immigrants first introduced it.

The dough of Fugazza is thick and fluffy, providing a perfect canvas for the caramelized onions that crown it. Often enjoyed without tomato sauce, this pizza allows the sweetness of the onions and the richness of the dough to shine. Some versions of Fugazza include cheese, known as "Fugazzeta," adding an extra layer of indulgence.

Fugazza is typically enjoyed as a street food, served in generous slices that are perfect for a quick and satisfying meal. Its unique taste and texture make it a beloved dish among locals and a must-try for visitors seeking to experience authentic Argentine flavors.

Full Recipe: Fugazza

Ingredients:

  • For the Dough:

    • 3 1/2 cups all-purpose flour
    • 1 1/2 cups warm water
    • 2 1/4 teaspoons active dry yeast
    • 2 teaspoons salt
    • 2 tablespoons olive oil
  • For the Topping:

    • 3 large onions, thinly sliced
    • 1/4 cup olive oil
    • Salt and pepper to taste
    • Optional: 1 cup mozzarella cheese (for Fugazzeta)
    • Optional: Oregano or other herbs for garnish

Instructions:

  1. Prepare the Dough:

    • In a large bowl, mix the warm water and yeast. Let it sit for about 5 minutes until the yeast is foamy.
    • Add the flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.
    • Knead the dough on a floured surface for about 10 minutes, until smooth and elastic.
    • Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  2. Prepare the Topping:

    • While the dough is rising, heat the olive oil in a large skillet over medium heat.
    • Add the sliced onions, and cook, stirring occasionally, until they are soft and caramelized, about 20 minutes.
    • Season with salt and pepper to taste. Set aside.
  3. Assemble the Fugazza:

    • Preheat your oven to 475°F (245°C).
    • Punch down the risen dough and transfer it to a greased baking sheet or pizza pan. Stretch the dough to fit the pan, creating a thick, even layer.
    • Spread the caramelized onions evenly over the dough.
    • If making Fugazzeta, sprinkle the mozzarella cheese over the onions.
    • Optionally, garnish with oregano or other herbs.
  4. Bake:

    • Bake the Fugazza in the preheated oven for about 15-20 minutes, or until the crust is golden and cooked through.
    • Let it cool slightly before slicing and serving.

Enjoy your homemade Fugazza, a delicious slice of Argentina's culinary heritage!
