  Detroit-Style Pizza

Detroit-Style Pizza is a delicious and distinctive variation that stands out in the world of pizza. Originating in Detroit, Michigan, in the mid-20th century, this pizza is known for its thick, airy crust with a crispy exterior.

The key to its unique texture lies in the baking method: it's cooked in rectangular, blue steel pans originally used for automotive parts, which give the crust its characteristic crunch.

Unlike traditional pizzas, Detroit-Style Pizza has its toppings layered in reverse order. The pepperoni goes directly on the dough, followed by a generous layer of Wisconsin brick cheese that extends to the edges, creating a caramelized cheese crust.

The final touch is the sauce, ladled on top in thick stripes after baking, ensuring the crust stays crispy.

This pizza's rich flavor, crunchy texture, and hearty toppings make it a favorite among pizza enthusiasts. Its unique preparation and baking method set it apart, offering a delightful experience that combines a soft, fluffy interior with a satisfyingly crispy edge.

Whether you're a pizza aficionado or a casual eater, Detroit-Style Pizza is a must-try for its bold and comforting flavors.

For the Dough:

  • 2 1/4 teaspoons active dry yeast
  • 1 1/2 cups warm water (110°F)
  • 3 1/2 to 4 cups bread flour
  • 2 tablespoons olive oil

  • 1 cup pizza sauce (store-bought or homemade)
  • Olive oil for greasing the pan

Instructions:

  1. Prepare the Dough:

    • In a small bowl, dissolve the yeast in warm water. Let it sit for about 5 minutes until foamy.
    • In a large mixing bowl, combine 3 1/2 cups flour, olive oil, sugar, and salt. Add the yeast mixture and mix until a dough forms.
    • Knead the dough on a floured surface for about 7-10 minutes, adding more flour as needed, until the dough is smooth and elastic.
    • Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours, or until doubled in size.
  2. Preheat the Oven:

    • Preheat your oven to 500°F (260°C).
  3. Assemble the Pizza:

    • Punch down the dough and spread it out in a well-oiled 10x14-inch rectangular pan. Make sure the dough reaches the edges and corners.
    • Layer the pepperoni slices evenly over the dough.
    • Spread the shredded cheese evenly over the pepperoni, making sure to cover the dough all the way to the edges to create the crispy cheese crust.
  4. Bake the Pizza:

    • Place the pan in the preheated oven and bake for 12-15 minutes, or until the cheese is bubbly and caramelized around the edges and the crust is golden brown.
  5. Add the Sauce:

    • Remove the pizza from the oven and let it cool for a couple of minutes.
    • Spoon the pizza sauce in thick stripes over the top of the cheese.
  6. Finish and Serve:

    • Let the pizza cool for a few more minutes before cutting it into squares.
    • Serve hot, enjoying the crispy, cheesy edges and the flavorful layers of toppings.
